Beef Bulgogi Bowls
I adore Beef Bulgogi. The flavors are intense and delicious, but I don’t adore the marinating. Using ground beef (or turkey) is a fantastic vehicle to get the bulgogi flavor in a fraction of the time. It’s a meal you can meal prep or take with you on the go. I typically serve it with pickled cucumbers & red onions, and a sprinkle of edamame. You can also put a fried egg on top and drizzle with more hot sauce.
Ingredients
2 lbs ground beef
1/2 C soy sauce (I use Tamari to make it gluten-free)
1/2 C packed light brown sugar
2 Tbsp sesame oil
2 Tbsp chili garlic sauce or Sriracha
1/4 C rice wine vinegar
2 Tbsp minced garlic
2 Tbsp minced ginger
1/4 cup thinly sliced shallots
Method
In a large bowl, whisk together the soy sauce, brown sugar, chili garlic sauce, rice wine vinegar, and shallots.
Heat a large skillet over medium heat.
Add ground beef. When the beef is 75% done, add in garlic and ginger. Cook until browned.
Add the sauce in and let it cook until thickened just a bit
Serve with rice and any toppings you wish.
