Ten Back-to-School Recipes

We go back to school next week; I know a lot of kids are already back. I have two kids in high school now, so I feel like the back-to-school activities are slightly less stressful than when they were in elementary school. HOWEVER, they are teenagers, they eat a lot, and I need easy meals that produce a lot of food and are done in less than an hour. I’ve rounded up ten recipes that I think you will enjoy. Some are oldies I’m bringing back, I’ve got a slow-cooker one, a couple in the pressure cooker, and a few in the oven. Time is a commodity most of us don’t have, so let me ease the burden of figuring out dinner. Because honestly, if I hear “What’s for dinner?” one more time, I may lose my mind!

Crispy tacos with rice & black beans

Who doesn’t love a taco? You can fill these with any meat (or not) you’d like and add any toppings you like. They’re quick, easy, and freezable. We keep a stash in the freezer (freeze them individually) so we can pull them out as needed.

Risotto doesn’t have to be reserved for the weekends.

Using a pressure cooker you can have risotto on a weeknight! Using this base recipe you can add anything you’d like to make it your own.

I love pasta in all forms. Lasagna is one of my husband’s all time favorite meals. I typically don’t have the time to make traditional lasagna, so I use my Instant Pot instead! Same flavors, half the time.

Beef Bulgogi Bowl

Beef bulgogi packs HUGE flavor but usually takes a day to marinate. Using ground beef you get all the flavor in a fraction of the time.

Pizza rolls

Pizza dough, sauce, and cheese are the base. You can add you favorite pizza toppings. These a wonderful for school lunches or a fun, easy twist on dinner.

Always a classic. Make it faster with bottled teriyaki sauce or make your own. Serve with rice and veggies and dinner is done.

Pesto chicken & pasta

Chicken, mozzarella, pesto, and pasta; what could be better. Once you pop the chicken in the oven you can do everything else for dinner!

Chili, but make it lighter & bright. Super filling and a meal all it’s own it’s easy to make in the pressure cooker or on the stove. Either way, it takes about 30 minutes.

Who knew a pot of beans and some ground beef could taste so good?! Easy, cheap, feeds a crowd, and cooks all day.

Mashed potatoes, chicken, bacon, and cheese bake together for a 30 minute meal. And, it makes tons of leftovers!
